Stuffed Poblano Peppers

Ingredients

  • 1 ea. Poblano pepper
  • 4 oz. Cattleman’s Selection® All Natural* Crumbles® Ground Beef
  • 2 oz. Monarch® Corn/Black Bean Fire Roasted Blend
  • 1 oz. Diced fresh tomato
  • Pinch Fresh cilantro for garnish
  • 1 oz. Glenview Farms® Fancy Shredded Cheddar and Monterey Jack Cheese
  • Optimax® Frying Shortening

Preparation

  1. Cut poblano and de-seed. 
  2. In a sauté pan, add 1 oz. oil. Add Beef Crumbles® and brown. 
  3. Add diced tomatoes and Fire Roasted Blend and cook for 6-8 minutes. 
  4. And salt and pepper to taste. 
  5. Stuff poblano peppers with the mixture and top with Shredded Cheddar and Monterey Jack cheese. 
  6. Bake at 400 degrees F for 12-16 minutes.
