Stuffed Poblano Peppers
Ingredients
- 1 ea. Poblano pepper
- 4 oz. Cattleman’s Selection® All Natural* Crumbles® Ground Beef
- 2 oz. Monarch® Corn/Black Bean Fire Roasted Blend
- 1 oz. Diced fresh tomato
- Pinch Fresh cilantro for garnish
- 1 oz. Glenview Farms® Fancy Shredded Cheddar and Monterey Jack Cheese
- Optimax® Frying Shortening
Preparation
- Cut poblano and de-seed.
- In a sauté pan, add 1 oz. oil. Add Beef Crumbles® and brown.
- Add diced tomatoes and Fire Roasted Blend and cook for 6-8 minutes.
- And salt and pepper to taste.
- Stuff poblano peppers with the mixture and top with Shredded Cheddar and Monterey Jack cheese.
- Bake at 400 degrees F for 12-16 minutes.
