Smoked Turkey Breakfast Burrito

Ingredients

  • 1 ea. del Pasado® Flour Tortilla, 12"
  • 3 oz. Chef's Line® Organic Purple Rice and Quinoa Blend
  • 2 oz. Glenview Farms® Cage-Free Liquid Whole Egg
  • 2.5 oz. Chef's Line All Natural* Smoked Turkey Thigh Burnt Ends & Pieces
  • 2 oz. Chef's Line Spicy Fire-Roasted Pepper Guacamole
  • 2 oz. del Pasado Chile Con Queso Dip
  • 2 oz. del Pasado Charred Chipotle Salsa Picada
  • 1.5 oz. Glenview Farms® Crumbled Hickory Smoked Feta Cheese

Preparation

  1. Cook liquid eggs, rice and quinoa blend, smoked turkey ends and pieces and queso according to package instructions. 
  2. Hold. 

For Service:

  1. Warm a flour tortilla on the grill or flat top, layer the middle of the tortilla with purple rice and quinoa blend, scrambled eggs, smoked turkey burnt ends, smoked feta and chipotle salsa.
  2. Wrap into a burrito.
  3. Serve with a side of guacamole and queso for dipping.
