Shredded Pot Roast and Savory Sweet Potato Hash

Ingredients

  • 2 lb. Pot Roast
  • 4 c Chef’s Line® Sweet and Savory Sweet Potato Blend
  • 2 c Monarch® Low Sodium Brown Gravy Mix
  • 1 c Monarch Garlic Aioli
  • 1 c Chef’s Line® Crème Fraîche
  • 3 T Monarch Prepared Horseradish
  • 4 T Glenview Farms® Smoked Feta Cheese
  • 2 T Cross Valley Farms® Italian Parsley
  • 8 ea. Glenview Farms Cage Free Eggs

PREPARATION

  1. Heat pot roast according to package directions. Let cool to touch and shred. Hold warm.
  2. Make brown gravy mix according to package directions. Hold warm.
  3. Combine garlic aioli, crème fraîche, and prepared horseradish in a bowl. Season with salt and pepper. Adjust horseradish for spiciness as desired. Transfer into a squeeze bottle and refrigerate until needed.
  4. Roast sweet potato blend according to package directions. Hold warm.

To Plate: Place sweet potato blend into a shallow bowl. Top with shredded pot roast, drizzle with horseradish cream sauce, and sprinkle minced Italian parsley. Finish with two eggs cooked to order.
