Prime Rib with Mashed Potatoes, Roasted Carrots, Gravy and Rolls

Ingredients

  • 1 ea. Cattleman’s Selection® Prime Rib
  • 1 to 2 ea. Cross Valley Farms® Homestyle Mashed Potatoes
  • 1 ea. Monarch® Au Jus Mix
  • 1 ea. Chef’s Line® Demi-Glace
  • 1 bag Monarch Assorted Color Carrot Coins
  • 0.25 c Cross Valley Farms Italian Parsley, minced
  • 1 batch Monarch Parker House Rolls
  • 1 c Chef’s Line Crème Fraîche
  • 1 c Monarch Garlic Aioli
  • 3 T Monarch Horseradish

PREPARATION

  1. Prepare prime rib according to package directions. 
  2. Prepare au jus according to package directions, substitute half of required liquid with Chef's Line Demi-Glace to enhance flavor.
  3. Roast carrots according to package instructions. Mount with butter. Garnish with minced parsley. 
  4. Combine crème fraîche, garlic aioli and horseradish to make horseradish cream sauce. Season with salt and pepper, to taste.
