Gnocchi and Spinach Soup

Ingredients

  • 1 oz. Minced garlic
  • 1 oz. Diced yellow onion
  • 1 oz. Oil
  • 10 oz. Vegetable broth
  • 2 oz. Fresh baby spinach
  • 4 oz. Chef’s Line® Italian Asiago Stuffed Gnocchi
  • Optimax® Frying Shortening
  • Salt and Pepper, to taste

Preparation

  1. Sauté onion and garlic until soft.
  2. Add 10 oz. vegetable broth. 
  3. Add spinach for the final minute. Set aside. 
  4. Heat sauté pan and add 1 oz oil. Add 4 oz. Chef’s Line Gnocchi. Toss until golden brown. 
  5. Add gnocchi to soup. 
  6. Salt and pepper to taste.
